YouTube

I've been surprised by the stuff you can find on YouTube these days. Last week someone forwarded me a link from some early 1970s "Prep Quiz Bowl" shows. Last night I ran across some great old Justin Wilson bits. I'm also happy to report that he is really a Cajun. I heard a rumor many years back that he was from from New York (not true!). They must have confused him with Jerry Jeff Walker. But Justin Wilson is perhaps the original TV chef, and much funnier (and a better cook) than most of the 'chefs' on TV today. Perhaps one day there will be a dial on my TV where I can set the date, not just the channel ("I'd like to watch TV in 1972 today").

  • My mom knew of Justin Wilson back from his days as a safety engineer at the sugar refineries near Donaldsonville where she was born and raised and worked in the office of one particular sugar cane plantation (Yes - it really was called a plantation. My grandpa ran the general store and my grandma the post office).

We met him many years later at a book signing. My mother introduced herself and how she had met him years before. He was very gracious and visited with us for a few minutes.

I do remember that he seemed to crank down the over the top, "stage" version of his accent a bit in that brief conversation, but he certainly was a bona fide Rajun' Cajun, a nice gentleman and and damned good chef. I recommend all his cookboooks.
